Twas the Night Before Christmas

It is almost Christmas day - I've been busy today doing last minute things - picking up the salmon, baking a Christmas cake, making desserts, wrapping presents, writing in Christmas cards, last minute gifts etc. 

I made my Christmas cards again this year, with two scenes involving the New Zealand Christmas tree - the Pohutukawa. I took one photo in Kaikoura with a silhouette of the Pohutukawa and the other photo of a Pohutukawa in bloom by the sea was taken near Punakaiki, on the west coast of the South Island of New Zealand.  I even got envelope seals to match my cards - so cool!

I spent a couple of days baking with my nieces last weekend.  Their little fingers were dipping into everything.  My 3 year old niece admitted she was making a mess but it was a "good mess".  Of course the best part of baking is licking the bowl and the spoon. I still do it now haha!

I've never made a Christmas cake before so that was fun.  I also made raspberry mousse which was actually quite hard so hopefully they will be ok.  I also made a chocolate marquise to go with the mousse. It sounds gourmet yes, but who knows if they will taste any good haha.  It's all trial and error and I tend to make things that I've never tried before and it's all a bit risky.

I'm now on holiday for 3 weeks so I'm really happy it's finally my summer break.  I wish everyone a very Happy Christmas with your families and safe holidays.
